RATATOUILLE-ISH

Reminiscent of the French Mediterranean vegetable dish, this vibrant ratatouille-ish summer inspired dish lacks the traditional chunky style and eggplant but is equally hearty and flavorful as the original. This shingled red onion, zucchini and tomato version is a quick make and bake meal with limitless variations. Serve on top of a bed of greens, flatbread or pasta for a more substantial meal

COUNTRY STYLE BREAD

INGREDIENTS
3 tbsp (45 mL) olive oil
2 cloves garlic, minced
6 sprigs fresh thyme, chopped
1 small red onion, halved, finely sliced
2 -3 medium tomatoes, seeded and diced
2 large zucchinis, sliced
1 tsp/5 ml dried herbes de Provence
Salt and freshly ground pepper to taste
For uniform slices, select tomatoes and zucchini of equal size

OPTIONAL:
Vegetable additions - add one small eggplant or one red pepper, halved, sliced

METHOD
Add minced garlic and fresh herbs to the olive oil and set aside to infuse. Slice onions, tomatoes, and zucchini into uniform slices. Brush the sides of an oven-proof casserole. Evenly shingle sliced vegetables overlapping to fill the bottom of the casserole. Brush any remaining garlic-herb-infused olive oil over the vegetables. Sprinkle with salt, pepper, and herbes de Provence.
Transfer the casserole to a preheated 350°F/176°C oven and cook until soft and thoroughly cooked, about 35-40 minutes.
