HARVEST BLEND COUSCOUS SALAD
WITH CITRUS VINAIGRETTE

Delicious and packed with a punch of fresh citrus flavor, this hearty dish is rich in fiber, protein, and nutrients. Serve up hot or cold, with any combination of your favorite seasonal vegetables, a healthy grain blend, and a fresh, citrusy vinaigrette. My go-to pantry favorite is Trader Joe’s grain-packed blend of Pearled couscous, Orzo, Split baby Garbanzo beans, and red quinoa.

COUNTRY STYLE BREAD

INGREDIENTS
Roasted Tomatoes
1-pint cherry tomatoes, halved, roasted
Splash of extra virgin olive oil
10 sprigs fresh thyme

Couscous Salad
1 ¼ cup/310 g Trader Joe’s Harvest couscous blend or substitute Pearl couscous, Orzo or for gluten-free use Quinoa
2 cups/500 ml vegetable broth
1 tbsp/15 ml plant-based butter

Swop out Corn for your favorite seasonal veggies
splash extra virgin olive oil
1 shallot, finely chopped
1 cup/250 g fresh corn off the cob, raw or grilled
2 green onions, sliced on the bias
Salt and pepper to taste.
Serve with a selection of greens: romaine lettuce, mesclun greens, or rocket

Dressing
2-3 tbsp/30-45 ml extra-virgin olive oil
1 tbsp/15 ml lemon juice
½ tsp/2 ml Dijon mustard
1 clove garlic, peeled and crushed
2-3 sprigs fresh thyme, chopped
Salt and pepper, to taste

METHOD
Roast the tomatoes - Preheat oven to 350°F/176°C. Halve the cherry tomatoes, toss in olive oil, and place cut-side down on a sheet pan, and top with fresh thyme. Roast in the oven until the tomatoes start to blister. Remove from the oven, set aside to cool.

Make the couscous: In a saucepan, bring 2 cups/500 ml of vegetable stock to a boil. Add the plant-based butter and couscous blend, return to a boil, then reduce to a simmer, covered, until cooked, about 10-12 minutes. Remove from the heat and let sit until ready to use.

Make the dressing: whisk together all of the vinaigrette ingredients in a small bowl until emulsified.

In a large sauté pan over medium heat, heat the oil, add the shallots, corn, and green onion, and sauté until they start to brown. Season with salt and pepper, to taste. Remove mixture from the heat and transfer to a large serving bowl. Add the cooked couscous, roasted tomatoes, and enough dressing to bind the mixture. Gently stir to combine. Refrigerate until ready to serve. Transfer to an individual plate or serving platter and serve with a selection of dressed greens.
