ROASTED BUTTERNUT SQUASH SOUP
From fall to spring, this creamy-velvety and comforting soup is a staple for lunch or dinner at my house. I often roast the squash the day before, allowing for a quicker soup prep the next day. As the onions, leeks, and squash caramelize, the luscious aroma will fill your kitchen, and be sure to whet your appetite.

INGREDIENTS
1 large butternut squash (about 4 lbs)
olive oil for brushing
salt and pepper to season squash for roasting
2 tbsp/30 ml olive oil
1 large yellow onion, rough chop
1 leek, white only, washed, chopped
3 cloves garlic, minced
1 tbsp/15 ml minced fresh ginger (Optional)
1 large apple, peeled, cored, chopped
3 cups/700 ml vegetable stock, heated
2 tbsp/30 ml fresh thyme
15 oz/425 ml can of coconut cream
Salt and pepper to taste
Garnish: pumpkin seeds and fried basil, thyme or sage
